Tres!
We (Monika and I) just started a food truck, located around the corner from D's Garden. It's called Tres, because 1. it's our third restaurant 2. it's the magic number and 3. there are three people in our family, Me, Moni and O. Also, it was the only name on my list of, like 50 names that Moni liked. (!Defenestrar! had an amazing logo.)

We change it up every three weeks (see the theme?) and also are planning on adding brunch and pop ups.
How to find us
We are in the La Romana area of Culebra, around the curve from D's Garden. If you hit La Pica or Suzie's you've gone too far, but you should definitely give both of those places a try.

Our rooster hot sauce line. Burning Cock, the original, smoked pineapple, habanero and roasted garlic. Don Verde, a little less heat, but all the flavors of roasted jalapeños and garlic. Gallo Mysterio, mango and chipotle combine to form a flavor explosion. One taste and you will love the cock.

How Does it Work?
We start by getting to know each other. Once you submit your inquiry, I’ll get back to you within 48 hours. We’ll work together to make up a menu that fits your budget, tastes, dietary needs and expectations. Then I’ll send you an invoice. Once you get to Culebra, I’ll contact you to finalize all the details (where you are staying, time, etc). Then you can relax, enjoy your vacation and let us take care of feeding you.

How far in advance do I need to order?For personal chef services, we require at least a 2 week advance notice. This gives us enough time to source the goods, plan the menu, prep, etc For picnic baskets, 48 hours.

Where do you get your stuff?We try to go as local as possible. We get fresh fish from a local fisherman when possible. We get our meats from Cabo Rojo Steaks and our produce from D’s Garden and Produce. We go by the old adage that the best way to make good food is to take great product and try not to screw it up.

Who are you?I’m Zach, the former Zach of Zaco’s Tacos. After selling the restaurant, I took a couple years off to make t-shirts and get our daughter through high school. Now that she is off to college, I’ve started missing the kitchen, so I figured I would dip my toes back in the culinary world, by filling a need that the island has — access to different food without a wait. I’ve got three decades of experience in everything from fine dining to short order and I’m still learning new techniques.
